Kachoris of Kota
Kota is serious about its kachoris, dal kachori with a punched hole and chutney pour is the OG. Six spots tried, all a consistent 8/10.
If you Google "best kachori city", you will surely get Kota. Two of my friends are from Kota, and the Kota-ites take immense pride in their kachoris.
Kota & Indore have a similar culture of breakfast (poha & kachori). Kota emphasises on the kachoris, and Indore emphasises on the poha. I have had really good poha in Indore, and really good kachoris in Indore.

The original kachori in Kota is the dal kachori, served with a chutney by punching a hole in the kachori. You'll be asked if you would like meethi or teekhi chutney, the teekhi chutney is a brownish one which is actually quite sweet, and the other is a green chutney. You can choose both if you like.

You can also get some good pyaaz kachori in Kota, the place is called Jodhpur Sweets (great makhaniya lassi as well). Most other places serve dal kachoris.

- An unnamed shop: my friend's go-to, they've been eating here for years

- Ratan Kachori, Nayapura
All the kachoris in Kota were very similar in taste, and all of them were a solid 8/10.
The kachoris were really good, but not my personal favourites. Definitely an important addition to the kachori trail of India though.
