Kachoris of Kolkata
Kolkata's club kachoris are puri-like, hing-filled, and distinctly Bengali. I've only scratched the surface here, rating is pending until I explore more.
I still have to try more kachoris in Kolkata. But I tried one here.
The famous kachoris in Kolkata are called club kachoris. Relatively smaller than the usual kachori, with a puri-like feel, but just slightly tighter than a puri. These are filled with hing (asafoetida) and are served with aloo ki subzi and some kind of meethi chutney (I'm not entirely sure about the chutney, I'd need another visit to confirm).
Sharma Tea House in Kolkata, the place I tried club kachoris
Club kachori with matar sabzi and jalebi on a yellow tray, a quintessentially Kolkata breakfast combination
I would like to try more club kachoris in Kolkata and write more about it.

Kachoris of Aligarh
Flat, large, slightly doughy inside, Aligarh kachoris are unlike anything else on the trail. Served with spicy aloo sabzi and raita, and weighted with personal memory. Rated 9/10.
