Kachoris of Jodhpur
Jodhpur is the flagship city for kachoris in India (pyaaz kachori), mawa kachori, dal kachori, and more. A strong 9/10.
Jodhpur is the flagship city for kachoris.
The city serves multiple types: pyaaz kachori (onion kachori), dal kachori, and the sweet mawa kachori.
Pyaaz kachoris are mostly unique to Jodhpur. Some other cities serve them too, there's a famous place in Jaipur called Rawat Mishthan Bhandar, and you can also get them in Kota under the name Jodhpur Sweets. But nothing's better than Jodhpur's pyaaz kachoris.
Dal kachoris are popular throughout India; Jodhpur serves them well too.
Mawa kachoris are made up of mawa and dry fruits. Mawa (also known as khoya) is basically made by cooking milk gently until it becomes a creamy solid. It's filled into the kachori and then dipped in chashni (sugar syrup).
You can also get kadhi kachoris in Jodhpur. I didn't try them here, but I've tried them in Alwar, and I think the origin is from Ajmer (I still have to try kadhi kachoris in Ajmer).

Where to Eat
If you're on a train journey, there's a popular eatery by the name of Janta Sweet Home, you can get pyaaz kachori & mawa kachoris packed from here.
Another good spot for pyaaz kachori is Surya Namkeen.
For dal kachoris, try Narayan Mishthan Bhandar (Lal Bhatti Wala), this has to be the best dal kachoris I have tried. They are made with pure ghee and are super fresh & crispy.
Rating: 9/10. Probably the best in India.

Kachoris of Aligarh
Flat, large, slightly doughy inside, Aligarh kachoris are unlike anything else on the trail. Served with spicy aloo sabzi and raita, and weighted with personal memory. Rated 9/10.
Kachoris of Delhi
Delhi serves two distinct kachori styles, khasta dal kachori with fiery aloo subzi, and flat kachoris topped with chole. A decade of eating at Shri Ganesh Corner has made it personal. Rated 8.5/10.
