Kachoris of Indore
Indore's kachori culture is tied to its legendary snack scene (aloo kachori with chutney), fresh onions on top, and a poha pairing that just works. Rated 7.5/10.
Indore has a great culture of snacks (and for the same reason), great kachoris.
Kachori along with the iconic indori poha makes for an amazing combination. Most famous poha shops in Indore serve kachoris alongside (the two are tied together here).
My first try at kachori was from Guru Pohe (the best poha in Indore), if you ask me (and it turned out really good).
Aloo kachori at Indore, broken open and topped with fresh shredded onions, fire combo
Indore primarily specialises in aloo kachoris. Like Kota, there's a poke-and-chutney-pour style. This one kachori added chutney and then fresh thinly sliced onions on top. Fire combo.
There's also a kachori called the bam kachori in Indore which is pretty famous, I saw it and it looked good. I'll be trying it on the next visit.

Kachoris of Aligarh
Flat, large, slightly doughy inside, Aligarh kachoris are unlike anything else on the trail. Served with spicy aloo sabzi and raita, and weighted with personal memory. Rated 9/10.
Kachoris of Delhi
Delhi serves two distinct kachori styles, khasta dal kachori with fiery aloo subzi, and flat kachoris topped with chole. A decade of eating at Shri Ganesh Corner has made it personal. Rated 8.5/10.
